Micha brings a private sushi chef experience into your home kitchen — four hours of hands-on work from total prep through a meal you roll and share together.
Micha is a veteran sushi chef and farmer with 27 years of hands-on experience handling knives and rolling fish. His culinary journey began in 1999 as a self-taught sushi chef in Charleston, South Carolina, leading to rigorous professional training in 2005 at the acclaimed Chuck’s Fish in Tuscaloosa, Alabama. Following his time there, he returned to Charleston to run J Paulz on James Island as head sushi chef for two years, executing a fast-paced, premium sushi program. Today, Micha operates Jolly Pond Farm, where he bridges the gap between sourcing high-quality, sushi-grade fish anywhere in the world and integrating farm-fresh produce, combining a lifetime of culinary mastery with market gardening expertise.

Micha brings his specialized equipment and industry insights to your home kitchen for an interactive sushi masterclass. The session begins with a brief introduction to his background before diving directly into the core foundation of great sushi: the art of rice preparation. Attendees will watch a step-by-step, hands-on demonstration of how to properly cook, season, and handle sushi rice to achieve perfect texture and balance.
From there, Micha will cover practical strategies for sourcing quality fish and fresh ingredients in any region so you can recreate authentic sushi at home. The class will walk through essential prep work, including breaking down and preparing fish, prepping farm-fresh vegetables, and wrapping and maintaining your bamboo rolling mat for seamless operation.
Next up is a live rolling demonstration. Micha will detail the subtle mechanics of applying rice evenly to the nori, placing fillings correctly, and executing a tight, clean roll every time. He will also share fundamental knife skills, demonstrating how to properly slice rolls without crushing them. To wrap it all up, everyone will gather to taste, eat, and enjoy fresh sushi together. Whether you are a total beginner or looking to sharpen your kitchen technique, you will leave with the confidence, knowledge, and skills to roll like a pro.

Entry-level private chef at-home platter party. Micha brings fully prepped ingredients, live-rolls in front of you in your kitchen, and builds the platters — chef’s choice in his usual rolling style. You’re welcome to call and discuss optional ingredients; the menu stays Micha’s call.
